Zucchini Noodles with Pesto

  • 4 medium-sized zucchinis

  • 1 cup of fresh basil leaves

  • 1/3 cup of olive oil

  • 1/4 cup of pine nuts (or walnuts)

  • 2 cloves of garlic

  • 1/2 cup of grated Parmesan cheese

  • Salt and pepper to taste

  • Cherry tomatoes (optional, for garnish)


  1. Spiralize the zucchinis to create noodles and set aside.

  2. In a food processor, combine basil leaves, olive oil, nuts, garlic, and Parmesan cheese. Blend until smooth to create the pesto sauce. Season with salt and pepper.

  3. Toss the zucchini noodles with the pesto sauce until well coated.

  4. Serve the noodles with a garnish of cherry tomatoes and extra Parmesan cheese if desired.
