Zucchini Noodles with Pesto

Ingredients:
- 4 medium-sized zucchinis 
- 1 cup of fresh basil leaves 
- 1/3 cup of olive oil 
- 1/4 cup of pine nuts (or walnuts) 
- 2 cloves of garlic 
- 1/2 cup of grated Parmesan cheese 
- Salt and pepper to taste 
- Cherry tomatoes (optional, for garnish) 
Instructions:
- Spiralize the zucchinis to create noodles and set aside. 
- In a food processor, combine basil leaves, olive oil, nuts, garlic, and Parmesan cheese. Blend until smooth to create the pesto sauce. Season with salt and pepper. 
- Toss the zucchini noodles with the pesto sauce until well coated. 
- Serve the noodles with a garnish of cherry tomatoes and extra Parmesan cheese if desired.
