Ingredients:

  • 1 cup sweet potato purée

  • 2/3 cup maple syrup

  • 1/2 cup almond butter or peanut butter

  • 1 tsp pure vanilla extract

  • 1 ½ Tbsp avocado oil (or substitute with melted vegan butter, melted coconut oil, or olive oil)

  • 1/2 cup cocoa powder

  • 1/4 tsp sea salt

  • 1 tsp baking powder

  • 2/3 cup oat flour (or GF all-purpose flour)

  • 1/2 cup chopped raw pecans (optional)

  • 1/4 cup dairy-free chocolate chips (optional)

Instructions:

  1. Preheat your oven to 325°F (163°C). Line an 8-inch baking pan with parchment paper.

  2. In a large mixing bowl, combine sweet potato purée, maple syrup, nut butter, vanilla extract, and oil until smooth.

  3. In a separate bowl, whisk together cocoa powder, sea salt, baking powder, and oat flour.

  4. Gradually mix the dry ingredients into the wet ingredients until well combined.

  5. Fold in pecans and chocolate chips if using, and spread the batter evenly in the prepared pan.

  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

  7. Allow the brownies to cool before slicing and serving.
