  • 4 boneless, skinless chicken breasts

  • 1 cup of fresh spinach, chopped

  • 1/2 cup of feta cheese, crumbled

  • 2 tablespoons of olive oil

  • 1/2 teaspoon of salt

  • 1/4 teaspoon of black pepper

  • 2 cloves of garlic, minced

  • Optional: 1/4 cup of sun-dried tomatoes, chopped


  1. Preheat your oven to 375°F (190°C).

  2. Make a horizontal cut in each chicken breast to create a pocket, being careful not to cut all the way through.

  3. In a bowl, mix together the spinach, feta cheese, garlic, and sun-dried tomatoes if using.

  4. Stuff each chicken breast with the spinach and feta mixture.

  5. Season the outside of the chicken breasts with salt and pepper.

  6. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 2-3 minutes on each side until golden brown.

  7. Transfer the chicken to a baking dish and bake in the oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
