Ingredients:
4 boneless, skinless chicken breasts
1 cup of fresh spinach, chopped
1/2 cup of feta cheese, crumbled
2 tablespoons of olive oil
1/2 teaspoon of salt
1/4 teaspoon of black pepper
2 cloves of garlic, minced
Optional: 1/4 cup of sun-dried tomatoes, chopped
Instructions:
Preheat your oven to 375°F (190°C).
Make a horizontal cut in each chicken breast to create a pocket, being careful not to cut all the way through.
In a bowl, mix together the spinach, feta cheese, garlic, and sun-dried tomatoes if using.
Stuff each chicken breast with the spinach and feta mixture.
Season the outside of the chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium heat and sear the chicken breasts for 2-3 minutes on each side until golden brown.
Transfer the chicken to a baking dish and bake in the oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
