  • 1/4 cup chia seeds

  • 1 cup coconut milk (light or full-fat depending on preference)

  • 1-2 tablespoons maple syrup or honey, to taste

  • 1/2 teaspoon vanilla extract

  • Pinch of salt (optional)


  1. In a bowl, mix the chia seeds with the coconut milk.

  2. Add the maple syrup (or honey) and vanilla extract. Stir well to combine.

  3. If you’re using salt, add a pinch to enhance the flavors.

  4. Cover the bowl and refrigerate for at least 2 hours, or until the pudding has thickened to your liking. Overnight is best for the flavors to meld.

  5. Once set, give it a good stir. If it’s too thick, you can add a bit more coconut milk to reach your desired consistency.
